Every month, depending on the seasons, we invite you to meet talented artisans, whether in the Foster spaces or directly in their workshops or greenhouses.
For the summer edition, we are celebrating flowers, plants, and nature 🌹
Meet Stéphanie de Bellefroid 🌼
Join us on Thursday 26th June at 8:30 am for breakfast in the company of Stéphanie de Bellefroid, founder of the flower farm Capucine à Table.
Who is Stéphanie de Bellefroid?
With a background in bioengineering, Stéphanie worked in a non-profit organisation focused on biomass valorisation. Tired of office work, she decided to retrain and trained in organic market gardening. She then enriched her experience by working with chef Sang-Hoon Degeimbre, a two-Michelin-starred chef, at L’Air du Temps. In 2018, she founded Capucine à Table, her own project.
Two years later, she settles in Foster, where she hand-cultivates a wide variety of aromatic herbs and edible flowers, without chemical inputs. Her gentle and committed approach appeals to many gourmet chefs who incorporate her delicate produce into their dishes.
What to expect during this meeting?
We will welcome you with a breakfast directly in the greenhouses at the entrance of the Foster estate. Stéphanie will immerse you in her world 🌱
• A manual cultivation and organic production
• Aromatic plants and edible flowers, known or surprising (agastache, perilla, oxalis…)
• Ecological challenges and a sustainable vision of agricultural work
We will conclude with a networking moment over a herbal tea made from dried flowers, accompanied by some fresh flowers to enjoy.
